Sherry Wine Vinegar
Spain is a country famed for its wines, so as you would expect it also has some excellent wine vinegars. Spanish sherry vinegars are surprisingly dry and complex, a dynamic alternative to the balsamic vinegars.
Sherry vinegar must be one of the most neglected condiments. It should really be a staple item in any kitchen cupboard. Chefs have been onto sherry vinegar for decades, and now home chefs everywhere are discovering it’ is complex and intense flavour that works magic on many dishes, and proper Gazpacho just doesn’t taste right without it!
A vinaigrette made with sherry vinegar is a must for your recipe box. Here’s a classic version that you can whip up in minutes!
1 third sherry vinegar, 2 thirds olive oil (more old if the vinegar is a strong one). Then to taste: sugar or honey, salt, pepper, and a bit of dijon mustard. Shake up until emulsified. A tiny bit of crushed garlic is always an option.
Spanish Sherry Wine Reduction
Ready to use from the jar, drizzle Spagnia sherry vinegar reduction over a simple piece of grilled or roasted meat, poultry, fish, or vegetables, or even a fruit salad or cheese platter. You can also use as a base for salad dressings.
